Mayfield United AFC was founded in 1971 at Iona Green in Cork. The founding fathers of the football club included Ernest O’Mahony, Joe Kennedy, Tadhg O’Neill, Coleman Casey, Richard Keating, and Pat O’Connell. Following an initial round of fundraising by these individuals the Club bought a second hand set of soccer gear from another local club, Casement Celtic, for a sum of £15 (€19).

Mayfield United was accepted into the Cork Schoolboys League in December of that year. Mayfield's' first proper soccer match was against the Casement Celtic FC at Ballyphehane. The match ended in a draw. The first competitive football match was against Wolfe Tone FC at Wolfe Tone Park. Over the years Mayfield United has used pitches as its' home venues. The club started off at Spring Lane. After this, the Club use Iona Green which uniquely had a manhole cover on the halfway line! In a major step forward the club had the use of dressing rooms in Burke's Pharmacy which was under construction at the time. The next home venue for United was Mayfield Heights which could only be used for the juvenile teams. a refurbished generation hut served as dressing rooms. The junior soccer teams continued their nomadic existence to Church Road, Blackrock and the Mahon peninsula
